Just six months after opening, ESSE was awarded its first Michelin star in June 2026. The Michelin star is a well-deserved recognition of Matt Orlando’s uncompromising commitment to sustainability, local ingredients, and a minimal climate footprint.

 

The first 10 guests to secure a ticket will gain access to a masterclass with Matt Orlando before dinner. During the session, the star chef will teach guests about the art of fermentation, fermentation processes, lactic acid bacteria and much more. NB. This part of the evening is sold out.

The event is part of the “A Taste of the Stars” programme series, in which NORDHUS, together with Copenhagen Cooking, explores some of the world’s finest ingredients – the kind that usually find their way onto the plates of Michelin-starred restaurants. The series also includes a dinner featuring Rossini caviar, tapas with Arla Unika, gourmet hot dogs by Michael Museth, and a crayfish feast with Fiskerikajen.

 

The event is being held in collaboration with Wonderful Copenhagen, Visit Denmark and the Food Organisation of Denmark.

 

The event runs from 6 pm to 7.30 pm, but you are of course welcome to stay at NORDHUS for one of our many events, a cosy drink at the bar or a spot of sunshine in the courtyard.

A taste of the stars at NORDHUS

10 September is all about fermentation, when Matt Orlando from ESSE visits NORDHUS. Together with Copenhagen Cooking and Matt Orlando, you’ll enjoy a delicious long-table dinner focusing on fermentation in all its forms.

With Californian roots and a CV that includes stints as head chef at flagship restaurants such as Noma, Le Bernardin, Per Se, The Fat Duck, Amass and now ESSE, Matt Orlando is anything but an unknown name on the international restaurant scene. For years, he has worked tirelessly to promote sustainable gastronomy and demonstrated how the cuisine of the future can be both responsible and delicious.

Last winter, Matt Orlando opened the restaurant ESSE in Nordhavn. Here, he has created yet another visionary cuisine in which fermentation plays a major role.

The long-table dinner featuring fermented foods is part of the “A Taste of the Stars” concept, created by the Copenhagen Cooking food festival. This series of gastronomic events focuses on haute cuisine and gives Danes the chance to get “A Taste of the Stars”. All because one or more of the dinner’s partners are suppliers to the stars – restaurants or chefs associated with the MICHELIN Guide.
